Breakfast Sandwiches with Garlic Butter Aioli

Aioli…a sauce we’re familiar with from restaurant menus, but few of us really understand. Aioli has expanded from its origins as a simple emulsification of olive oil mashed with garlic to mean, well, mayo plus something delicious. There really are no rules! This breakfast sandwich features a smooth, creamy aioli that uses mayonnaise and garlic, with butter as the magic ingredient.

Method

Butter Aioli Instructions

Step 1

In a small bowl, whisk together butter, mayonnaise, garlic, salt and pepper.


Sandwich Instructions

Step 1

In a small non-stick skillet, melt butter over medium heat.

 

Step 2

Add eggs and sprinkle with salt and pepper. Cook, without turning, for about 3 minutes or until white is set.

 

Step 3

Slide a thin spatula under the eggs, one at a time, and turn them over. Cook for 1 minute for over-easy or as desired.

 

Step 4

Place a cheese slice on bottom half of each toasted English muffin. Place an egg on top, then add bacon and tomato. Spread Butter Aioli over the inside top of the English muffin and cover sandwich.


Variation One: In a bowl, beat eggs, salt and pepper. Pour into skillet and gently move a spatula across the bottom and sides to form large soft curds. Cook for about 2 minutes or until no liquid remains.

Variation Two: Omit the English muffins and stuff all the delicious ingredients into pita pocket halves, croissants or sliced bread to change it up.
