Look for local brands such as Gunn’s Hill Artisan Cheese (Brigid's Brie), Albert’s Leap (Belle Marie), and St – Albert!

Method

Step 1

Slice brie into approx. 6 slices.

 
Step 2

Spread 1 side of each bread slice with butter.

 
Step 3

Heat a large skillet over medium-low heat. Place 2 bread slices butter side down, in batches if necessary.

 
Step 4

Place 3 slices of brie on bread slices, sprinkle with chocolate and top with raspberries. Top with remaining bread slices, butter side up. Cook, turning occasionally until bread is golden on both sides and brie is melted.

 
Step 5

Remove to a plate and cut in half to serve.

Tip

Other bread suggestions if challah is not available are your favourite fruit or nut bread like raisin or walnut loaves would work well.
