Skip take-out tonight and try this Caprese Chicken & Orzo Skillet made with Ontario Bocconcini, it’s got a whole ton of flavour and will have you going for seconds - maybe even thirds.
Next time you’re cruising the cheese isle at your local grocery store, look for Ontario bocconcini from brands such as Tre Stelle, Ferrante Cheese, Santa Lucia, and Bella Casara.
Step 1
Cut each chicken breast into 4 equal pieces crosswise and place in a bowl. Sprinkle with dried basil, salt and pepper tossing to coat well.
Step 2
In a large skillet, melt butter over medium high heat and add oil. Brown chicken well on both sides and remove to a plate. Reduce heat to medium-low.
Step 3
Cook shallot and garlic for 2 minutes to soften. Stir in orzo to coat. Add tomatoes, cream, broth, and parmesan; bring to a simmer.
Step 4
Return chicken and accumulated juices to skillet and nestle into orzo mixture. Cover and simmer gently for about 10 minutes, turning chicken occasionally and stirring until chicken is no longer pink and orzo is tender but firm. Remove from heat; uncover and sprinkle with bocconcini. Cover and let stand for 5 minutes to soften cheese.
Step 5
Sprinkle with basil and drizzle with balsamic glaze if desired to serve.
