These pillowy soft potatoes made with cheese and half & half are bite-sized delights! The perfect snack for any festive occasion.
Preheat oven to 375˚F. Prepare a parchment lined baking sheet and set aside
Pour potatoes into salted boiling water and cook until tender. Once ready, drain water and set aside.
Meanwhile, in a sauce pan add local butter, garlic, local half and half, black pepper and salt. Stir until combined and thickened.
Pour potatoes into sauce and mash until smooth. Add local mozzarella cheese, egg yolks and mix until combined and creamy.
Fill a piping bag with potatoes and pipe ¼ cup dollops onto the baking sheet. Place in oven and bake for 25-30 minutes or until golden brown. Once ready, brush with local butter, sprinkle with parsley to garnish and serve.
