A soft surface ripened cheese made with cow's milk from our family farm. This brie is free of stabilizers and preservatives and thus sold with a 'best between' date for your enjoyment. Each batch is aged six weeks and is delicately handled to preserve its creamy centre. Best enjoyed on its own or with a flavoured jelly such as red pepper jelly. Wheels are roughly 200 grams each.
One of their most popular varieties, the Wild Nettle provides a herbal, earthy flavour. When combined with the creamy Gouda, these combinations create an exceptional taste experience.
What appears to be a crumbly interior is actually rich and creamy on the palate with a nice balance of salt. The aromatic rind gives this cheese a contrasting texture to the interior and typical aromas associated with washed rind cheeses.
Grand Trunk is named after the old railway bridge of the former Grand Trunk Railway in St. Marys.
4. Fresh Mozzarella - Santa Lucia - International Cheese (Toronto, ON)
Mild, supple, and refreshing, Mozzarella gets its flavors from delicious cow’s milk. Springy and dense in consistency, with a light discernible aroma of wholesome cream, makes it a favorite among audiences with delicate palates. The profile changes once melted, becoming stringy and mellow in flavor. Today, modern techniques can only get you so far. Properly measuring the consistency by feel and experience, artisanal cheesemakers still rely purely on intuition and knowledge when deciding if the Mozzarella is at the right stage of development.
Thornloe Asiago cheese has been developed in the tradition of the cheese makers of northeastern Italy where the product was developed centuries ago. The cheese makers at Thornloe have produced an authentic mezzano d’Allevo taste profile. This hard cheese is available in either waxed or unwaxed exterior, is creamy white in colour with a compact and granular body. It has a sweet, sometimes nutty piquant flavour. Excellent shredding cheese which can be served over pastas, salads, appetizers and sauces.
6. Bella Blue - Albert's Leap - Quality Cheese (Vaughan, ON)
Soft and velvety white to off white mold exterior, white to off white interior with blue to green veins throughout. Soft to semi soft ripened cheese. Creamy and mild with a delicate hint of sweet and sour flavour.
7. Cheese Curds - St-Albert (St-Albert, ON)
A smooth and slightly elastic texture that makes that delightful squeaky sound when fresh. Soft creamy flavor.
8. 6-Year Cheddar - Maple Dale (Plainfield, ON)
Naturally Aged for 6 Years. As the years progress our cheddars will take on a more pronounced sharpness and aroma. More crumbling and salt crystallization will be prevalent.
