Making Eggs Benedict for a family is tough. It’s a challenge to keep everything hot enough to serve before everything dries out. Simplify breakfast by serving up this Eggs Benedict Strata. It has all the flavour and ingredients of Eggs Benedict without the need for individual plate set ups.

Method

Step 1

Open English muffins and cut each half into quarters and place to cover the bottom of a greased 13 x 9-inch (3 L) baking dish. Sprinkle with ham.

 

Step 2

In a large bowl, whisk together eggs, cream, milk, chives, mustard and pepper. Pour over ham and English muffin mixture and top with shredded cheese. Cover and refrigerate for at least 2 hours or up to 24 hours.

 

Step 3

Uncover and top with tomatoes, if using, and bake in 375°F (190°C) oven for about 45 minutes or until golden and knife inserted in centre comes out clean.

Turkey option: Substitute smoked turkey or leftover cooked turkey for the ham.
