This easy-to-make Herbed Ricotta and Feta Puff Pastry Tart recipe, made with Ontario Ricotta and Feta cheese, is incredibly versatile and can be served up for any occasion. Notes of sweetness from the honey and puff pastry compliment the salty hits from the feta cheese with every bite. Step 1
Preheat the oven to 350℉ (180°C).
Step 2
Unroll the puff pastry surface. Cut into 4 pieces lengthwise, use the folds in the pastry as markers. Then cut across the centre, left to right. Creating 8 rectangle tarts.
Step 3
Score a small border around the edges of each piece with a knife and then prick within the border with a fork.
Step 4
Wash the border of each tart with the egg and sprinkle sesame seeds.
Step 5
Transfer to a floured or parchment sheet lined baking sheet and bake for 8 - 10 minutes or until puffed and light golden.
Step 6
Once out of the oven and slightly cooled, carefully press the centre of each tart to create an indent. Set aside.
Step 7
Mix the ricotta, feta, olive oil and ¾ of the herbs together in a medium size bowl.
Step 8
Gently spread the cheese mixture within the border of each tart, filling edge to edge and return to the oven for another 5 – 8 minutes.
Step 9
Remove from oven, sprinkle remaining herbs, drizzle with honey and serve.
