Mermaid Bagel & Cream Cheese

This superfood Blue Mermaid Bagel & Cream Cheese recipe is sure to bring out the kid in all of us and guaranteed to amp up your summer. It's an elevated take on a classic bagel and cream cheese with local blueberries and spirulina (blue-green algae) providing a nutrient power-up.

Method

Step 1

Place cream cheese in a medium bowl and mash with back of a spoon until smooth and lump-free.
 

Step 2

Add 1/2 tsp spirulina and swirl through cream cheese, taking care not to over blend - you're going for beautiful streaks of colour.


Step 3

Turn cream cheese mixture over and add second 1/2 tsp spirulina and repeat until desired effect is achieved.


Step 4

Toast bagel and let cool slightly on plate.
 

Step 5

Using a tablespoon, swirl desired amount of cream cheese over each bagel half, taking care not to over blend the colour through the cream cheese.
 

Step 6

Top with blueberries, then add edible gold flakes, stars or other decorations.
