Step 1
In a bowl, combine leftover tandoori chicken, Ontario fontina, and Ontario mozzarella, salt and pepper in a bowl and mix until combined.

To make an egg wash, combine egg and water and mix until combined and set aside
Step 3
Fold spring roll paper in half from corner to corner, forming a triangle. Fold the right side over. Brush with egg wash and fold left side over and seal. Making a triangle pocket, fill egg roll wrapper with 1 large tbsp of chicken cheese mixture; flip the top fold inwards and seal the seams with the egg wash. Repeat until all wrappers or filling is used.
Step 4
Fry in oil until golden brown and serve warm
