Step 1
Preheat oven to 375

In a pot on medium high heat, add water, Ontario butter, sugar, and salt and gently simmer.
Step 3
Slowly mix in bread flour until a dough begins to form. Keep mixing until the flour is well incorporated and the pot is clean.
Step 4
Transfer the dough into a stand mixer with a paddle attachment. Mix on low to allow the mixture to cool. Slowly beat one egg at a time into the dough until fully incorporated. Repeat for the rest of the eggs.
Step 5
Carefully put the dough into a piping bag. Pipe 2 inch logs on a prepared baking sheet

Bake the eclairs for 20 minutes.
Step 7
While waiting for the eclairs to bake, make the filling. In a bowl, add Ontario artisan cheddar spread, Ontario cream, garlic powder, cayenne, thyme and pepper. Beat with a hand mixer until light and airy. Add the mixture to a piping bag.
Step 8
Remove the eclairs from the oven and poke one end with a toothpick. Top each eclair with shredded Ontario artisan 5 Brothers. Bake again until the cheese is melted.
Step 9
Remove the eclairs from the oven and punch a small hole under each eclair and let cool. Fill each eclair with the cheese mixture using the piping bag.
Step 10
Once all eclairs are filled, begin piping small dollops of the cheese mixture on each eclair. Add 2-3 pieces of microgreens and 1-2 radish spheres on each eclair. Serve immediately
