In a large bowl, add sugar, cocoa powder, and maple syrup.
In a glass measuring cup or microwave safe bowl, heat milk until steaming, in 30 second intervals. Then pour over sugar mixture and whisk until sugar has dissolved. Whisk in whipping cream and vanilla. Place bowl in refrigerator for about 2 hours until very cold.
Whisk mixture and pour into a shallow 8-inch (20 cm) metal baking pan or loaf pan and freeze for at least 8 hours or until completely frozen.
Alternatively, pour into ice cream maker and follow manufacturer’s instructions to freeze ice cream.
Scoop as is or transfer chunks of ice cream into food processor and pulse until smooth and serve.
Old School Ice Cream
For a fun idea with the kids, place milk mixture into a sealable bag or container and place in a larger container with ice and salt. Shake it around or pass it around so the kids can make the ice cream happen before their eyes! Very important to use well sealed containers so nothing is lost.
Make the ice cream flavour your own
Stir in your favourite additions like mini chocolate chips, crushed pretzels, chopped nuts or toffee bits into your ice cream before it freezes fully. You can also just sprinkle your ice cream with any of your favourite toppings like fresh local fruit or sauces!
