These magical noodles are part recipe, part science project, but totally amazing and easy to makefor adults and kids alike. The trick is to find a very dark red cabbage because you’ll use the natural pigments in the cabbage leaves to dye everyday rice noodles a beautiful blue. But, that’s not all—adding a little some lemon juice will produce a show-stopping colour transformation from blue to purple before your eyes.
Over high heat, bring pot of water to a boil. While you’re waiting for the water to boil, use a large kitchen knife to cut the cabbage into large pieces. Add cabbage leaves and boil for about 20 minutes.
Use a slotted spoon or tongs to remove the cabbage leaves, reserving the water.
Add noodles to the pot of water and cook, stirring, as per package directions.
Drain noodles (they should be a bright blue), mix in olive oil and portion on plates.
Add feta, salt, pepper and greens. Squeeze in lemon juice over top of the noodles and cheese (or use a clean spray bottle to spritz) and watch as the noodles change colour from blue to purple!
