Make your next mac and cheese legen-DAIRY with this delicious recipe using 3 types of local Ontario cheeses!

Step 1
Shred all your cheese in advance so that you can use them later on.
Step 2
In a pan, add butter and lobster meat and sauté over high heat for 4 minutes and set to the side.
Step 3
In a separate pot, melt 1 stick of butter and stir in the flour. Once all the flour has been dissolved, add the cream and milk. Let it simmer for 5 minutes.
Step 4
Add 3.5 to 4 cups of the shredded cheese into the pot and stir until completely melted. Note: hold back enough cheese to cover and melt on top the mac and cheese later on.
Step 5
Once the cheese has melted, season to taste with salt, garlic powder, and paprika.
Step 6
Add the cooked macaroni into the pot along with the lobster meat and stir until everything is combined and the consistency is to your liking.
Step 7
Transfer the mac and cheese into a large oven safe bowl then top with the remaining cheese and broil until melted. Top with chives and enjoy.
