Step 1
Mix thyme and salt on a baking sheet, then shake gently to spread the salt mixture evenly over the pan.
Step 2
Zest all 4 lemons directly and evenly over the salt so you can catch all the incredible oils from the rind in the process; this will add to the flavour.
Step 3
Leave on the pan overnight to dry or bake in a 200°F (95°C) oven for 30 minutes.
Step 4
Break up the salt & funnel into clean jars.
Step 5
Seal and label to add to your cupboard or give to someone special.
