Herb Salt

Using fresh herbs and citrus to flavour salts is a great way to extend the lifespan of your indoor herb garden. Seasoned salts are a great one-step finishing solution for meats, fish and vegetables or the perfect ready-made flavouring for olive oil dressings and marinades.

 

If you put a little more DIY muscle into the project, these salts can double as highly personalized, low-cost gifts! Package your creations in a decorative glass jar with a lid and label for easy hostess, housewarming or holiday gifts. Kept away from heat and light, the flavour infusion can last up to three years, so you can make them ahead for occasions to come.

Method

Step 1

Mix thyme and salt on a baking sheet, then shake gently to spread the salt mixture evenly over the pan.

 

Step 2

Zest all 4 lemons directly and evenly over the salt so you can catch all the incredible oils from the rind in the process; this will add to the flavour.

 

Step 3

Leave on the pan overnight to dry or bake in a 200°F (95°C) oven for 30 minutes.

 

Step 4

Break up the salt & funnel into clean jars.

 

Step 5

Seal and label to add to your cupboard or give to someone special.
