Cast Iron Grilled Garlic and Cheese Bannock

Bannock is a simple bread commonly associated with Canada’s Indigenous Peoples, with roots so deep in our national history it’s even mentioned in the journals of traders for The Hudson Bay Company. Bannock lends itself perfectly to many flavours and is an ideal side for campfire dinners or as a fun dish to make with your family.

Method

Step 1

In a large bowl, whisk together flour, baking powder, sugar and salt. Stir in butter and, using your fingers, rub butter into flour until it looks like coarse breadcrumbs and sticks together slightly. Drizzle in enough milk to make a soft dough.

 

Step 2

Turn out onto floured surface and knead into a 9-inch (23 cm) round shape, about 1/2 inch (1 cm) thick.

 

Step 3

In a small bowl, stir together melted butter, cheese and garlic; set aside.

 

Step 4

Place cast iron skillet on grill over medium heat (around 350°F/180°C to 400°F/ 200°C).
 

Step 5

Add butter to pan and, once melted, place dough into skillet. Close lid and grill for about 20 minutes or until bannock is risen slightly and light golden. Brush bannock with garlic cheese butter, close lid and let cook for another 5 minutes or until golden brown. Use oven mitts to remove skillet and let cool slightly before serving.
