Inspired by 2021's April Milk Calendar recipe Poured Pizza Bianca featuring creamy mascarpone cheese, we share with you today, another cheesy treat made using local, Ontario aged cheddar cheese. This Kimchi Grilled Cheese recipe was developed by foodie Jasmine Baker. ”Kimchi” is a classic Korean fermented vegetable dish mainly served as a side dish with every meal, but sometimes served as a main dish. Its acidity and heat make for great companions to the aged cheddar cheese used in this recipe, and the sesame crusted bread and sesame oil added to the butter during the grilling process highlights the kimchi and cheddar combo beautifully.
Step 1
Heat a medium pan over medium-low heat. Melt 2 tbsp butter with sesame oil in pan. Place 2 slices of bread down, in the pan and divide the cheddar cheese between the 2 slices evenly.
Step 2
Once the cheese has started to melt, add the kimchi to one side and use a spatula to flip the other slice of bread on top and close the sandwich. Use your spatula to press the sandwich down and meld, then peak at the bottom slice and ensure it's not too dark. If you are worried about the bottom burning, flip the sandwich over gently. Cover and let cook for another 2 to 3 minutes
