Chef Joshna Maharaj is a chef, cookbook author and activist. “I'm a chef who is interested in the state of our food system, and how everybody eats, from day to day, when they're not at restaurants. “This is a classic Indian cup of tea, and it's very similar to the way my mom and aunties used to make this when I was younger. Usually, this chai is made with equal parts milk and water, but I like it a bit richer than that, and so I use two parts of homo milk to one part of water.”
Combine all ingredients but the salt in a small sauce pot and bring to a boil.
Reduce heat to just higher than medium and keep a low rolling boil for 8-10 minutes, to caramelize the milk and sugar a bit.
Add pinch of salt, taste and adjust sugar as necessary. Strain tea and pour into cups.
