Skyr is an Icelandic cultured dairy product that is often compared with Greek yogurt. While it’s often eaten as a yogurt, skyr is actually a low-sugar, protein-rich form of sour-milk fresh cheese with a beautifully dense, smooth light flavour. This simple dish puts the creaminess of skyr to work, with aged Cheddar and jalapeño adding the perfect kick to an easy, delicious lunch or dinner.

Ingredients

Method

Step 1

In a pot of boiling, salted water, cook pasta for about 8 minutes or until just al dente.

 

Step 2

Drain and return to pot over low heat.

 

Step 3

Add spinach, cheese, cream cheese and garlic; stir until almost melted. Stir in yogurt and pepper until smooth.

 

Step 4

Garnish with hot sauce, if desired, and a few leaves of fresh spinach. Serve immediately.
