Prosciutto Maple Pancakes with Apples & Pecan

Not only is this recipe beautiful to look at, it’s delicious too! Made with Ontario Buttermilk and local Maple Syrup, these Prosciutto Pancakes with Maple Apple Pecan Topping are sweet, salty, and savoury. It’s got the right amount of crunch from the pecans with little hits of sweetness from the apple which contrasts the light, and buttery batter. If you’re pinched for time, you’re in luck, as this recipe is quick and easy to make and not as complicated as one may think. Be sure to add a dollop of whipped cream on top and watch the entire family eat with delight!

Maple Apple Pecan Topping

Method

Step 1

Maple Apple Pecan Topping: In a saucepan, melt butter over medium heat. Add apples and cinnamon and cook for about 3 minutes or until softened. Add maple syrup and pecans and bring to a simmer. Simmer for 2 minutes. Keep warm.

 

Step 2

Place prosciutto slices on large parchment paper lined baking sheet in 425 F (220 C) oven for about 3 minutes or until crispy. Remove from pan; let cool slightly and crumble into large pieces.

 

Step 3

In a bowl whisk together flour, icing sugar, baking powder, baking soda, salt and cinnamon. In another bowl, whisk together buttermilk, eggs and vanilla. Pour into flour mixture and whisk to combine. Whisk in butter. Pour into the same baking sheet and sprinkle prosciutto over top.

 

Step 4

Bake for 5 to 7 minutes or until centre springs back when touched gently. Remove from oven and cut into squares to serve. Spoon with Maple Apple Pecan Topping and whipped cream if desired.
