Maple Apple Pecan Topping: In a saucepan, melt butter over medium heat. Add apples and cinnamon and cook for about 3 minutes or until softened. Add maple syrup and pecans and bring to a simmer. Simmer for 2 minutes. Keep warm.
Place prosciutto slices on large parchment paper lined baking sheet in 425 F (220 C) oven for about 3 minutes or until crispy. Remove from pan; let cool slightly and crumble into large pieces.
In a bowl whisk together flour, icing sugar, baking powder, baking soda, salt and cinnamon. In another bowl, whisk together buttermilk, eggs and vanilla. Pour into flour mixture and whisk to combine. Whisk in butter. Pour into the same baking sheet and sprinkle prosciutto over top.
Bake for 5 to 7 minutes or until centre springs back when touched gently. Remove from oven and cut into squares to serve. Spoon with Maple Apple Pecan Topping and whipped cream if desired.
