Strawberry, Peach & Cottage Cheese Salad with Avocado

Fruit and refreshing cottage cheese make for a versatile, seasonal salad you can enjoy for breakfast or lunch. The zip of lemon and hint of basil add a unique twist to love.

Method

Step 1

Place cottage cheese in fine mesh sieve over bowl and set aside.

 

Step 2

In a large bowl, combine peaches and strawberries. Stir in basil, lemon rind and juice; toss to combine.

 

Step 3

Add drained cottage cheese and salt; stir gently to coat.

 

Step 4

Divide lettuce among bowls and spoon salad on top. Sprinkle with avocado and almonds to serve.

Tip

Placing the cottage cheese in the sieve is optional, it does help drain it a bit for a thicker cottage cheese mixture.
